Baby Cakes

Baby cakes as in a recipe! Not a cute nickname for your boyfriend.

I like baby everythings. Baby cookies, baby scones, baby lambs...the baby opportunities are endless.

In this case, it is baby carrot cakes, but you can pretty much do this with any cake recipe, it just needs a slightly shorter cooking time, and half of the recipe. Perfect for a girly tea party.

1/4C Raw Sugar

1/4C Vegetable Oil

1t vanilla essence

1 eggs

1/2 mashed banana

1/2C grated carrot

1/4C dates (soak in hot water, chop into small pieces)

1/2C self raising flour

pinch salt

1/2t baking soda

2T coconut thread

1/2t ground cinnamon

1/2t ground allspice

Preheat the oven to 175 degrees.

Whish the sugar, vegetable oil and vanilla essence

Add the egg, beat until creamy.

Add the banana, carrot, and the drained chopped dates.

Add the flour, salt, baking soda, coconut, cinnamon and allspice. Stir to combine.

Spoon into greased mini muffin tins and bake for approx 15min, or until a skewer comes out clean.

Leave to cool on wire tray, before applying......

Cream cheese icing

1/2C softened cream cheese

25g melted butter

1/4C castor sugar

Beat together until creamy.

Apply to baby cakes and decorate the top...I used muesli for these ones, but pumpkin seeds and chopped dried apricots look the bomb diggity too.
