Chocolate sandwiched Shortbread

Shortbread is ridiculously easy to make, and soooo yum. Plus you could probably sandwich it with different types of icing.

These guys are made for stars, but the opportunites are endless with cookie cutters, I've seen unicorn cookie cutters, tools like spanners and hammers, even penis cookie cutters! I'm assuming that if you were making penis shortbread it would perhaps be for a hens night.

Anyway

250g butter

4 heaped T icing sugar

2C flour

pinch salt

Preheat the oven to 160 degrees

Beat butter and sugar until light and creamy.

Add salt and flour. Mix.

Knead for a few minutes.

Roll into a log and refridgerate for 20min.

Remove from fridge, cut into 2cm sections and stamp out with cookie cutters. (I squashed them down a little after cutting if the cutter was to wide for the log, as I had many different sized stars)

Place on baking paper on tray in middle of oven. Bake for 20min, or until cooked, but not golden.

Chocolate icing

100g dark chocolate

25g butter

Chop chocolate and butter into pieces. Put into a bowl over a pot of simmering water. Stir until combined and melted.

Let it cool, until it is a spreadable consistancy.

Spread onto underside of shortbread and sandwich with another piece of shortbread.

Now eat your delicious bikkies, or at least some of them, and give the rest to your buddies.
