When I'm not busy running Starlight Music or rocking out with the Holograms I like to experiment with recipes. This is my experimentation with the Edmonds cupcakes.
My dilemma: 1.I found some cute 'mini' cupcake cases at one of those 'dollar' type stores where they were actually $2.50, which is still cheap. 2. I wanted to make both chocolate and lemon cupcakes but both 'mini' ones. 3. I only had a recipe for full size cupcakes.
125g butter, softened 1t vanilla essence 1/2C caster sugar 2 eggs 1C Standard plain flour 2t baking powder 1/4C milk (1T cocoa)
Cream butter, vanilla and sugar until light and fluffy. Add eggs one at a time, beat well. Sift flour and baking powder together. Fold this into the mixture. Stir in the milk
- Separate the mixture into two bowls. To one of the bowls add the Tablespoon of cocoa and mix well. This is your chocolate cupcake mix.
- Place the 'mini' cupcake holders into the mini muffin tin. Spoon each of the mixtures into the holders so they are around 3/4 full. I worked out to 20 mini cupcakes. (you may have to do this in two batches, depending on the size of your tin)
- Place in a pre-heated 170degree oven for 15min, or until cakes spring back when touched.
- Leave them to cool on a wire rack.
Now it's time to make the icing!
2C icing sugar 1/4t butter, softened
- Mix these together then seperate into two bowls.
To one, add 1/2T cocoa, 1/4t vanilla essence and 1T of hot water. Mix well. This is your icing for your chocolate cupcakes.
To the other, add 1t lemon rind, 1T lemon juice. Mix well. This is your lemon icing for your plain cupcakes.
- Cut the lids off your cupcakes (just to the top of the cupcake case). Run a dinner knife under hot water and use this to ice the cupcakes. (the hot knife helps to spread it more easily)
- Top the icing with decorations! Like jaffas! and liquorice allsorts! and just whatever you want!, jelly chrystals are a good sprinkler.
Then give them to your friends! I'm going to get Aja to give some to her friend Helen at work Hi Helen!, and I may see if Pizzazz from the Misfits would enjoy them, they may help clear some rifts we have.
