We Jammin', I wanna jam it with you.

Bob Marley likes making jam.

A friend and I found some cheap punnets of strawberries on our way to Palmerston North a few weeks ago, so we bought up big time...and made many jars of jam for Christmas presents.

560g Jam sugar (Supermarkets sell the Chelsea branded jam sugar)

1kg Strawberries, hulled and cut in half(hulling means removing the green leafy top of the strawberry. Or, you can go a step further and cut away the white flesh that surrounds the stem using the tip of a knife)

1 lemon, zest and juice

Put sugar, lemon juice and zest in a big pot and heat slowly until the sugar melts.

Add the strawberries and stir. Bring to the boil and cook for 8-10min.

Leave to cool slightly and skim off any froth.

Spoon into a sterile jar and seal. Jammin.
