Yum Jam Swirl Biscuits

Swirl, such a great word. Who wouldn't get excited about swirling something. Not me.

This is up there for one of the best dunking biscuits. Gingernuts obviously taking the trophy there.

150g Butter

3/4C Sugar

1 Egg yolk

1t Vanilla extract

1C Plain flour

1/2t Baking powder

pinch salt, ouch

3T Jam

Cream butter with sugar. Beat in the vanilla and egg yolk. Sift in dry ingredients and mix to a firm dough.

Roll out the dough to 5mm thickness, in the shape of a rectangle. 15cm/30cm approx. Spread with jam and roll up tightly into a log. Wrap in plastic wrap and put it in the fridge until firm.

Preheat oven to 180d. Grease 2 baking sheets. Cut the log into 5mm slices on the diagonal and put on the baking sheets. Bake about 12min, or until golden. Let cool on a wire rack. Mmmmmm yum swirl jam biscuit.
